The Traditional Process
True traditional balsamic begins with Trebbiano and Lambrusco grapes from Modena, cooked into concentrated "mosto cotto." After the slow cooking, the grape must is placed into barrels to mature for years. Aged using the solera method in a "batteria" of wooden barrels, master vinegar makers transfer the aging vinegar through different woods, each adding unique character to the final product.

Dark vs. White Traditional
Dark Traditional - Longer cooking creates rich caramelization and deep complexity, perfect for finishing meats, roasted vegetables, and decadent desserts.
White Traditional - Gentler cooking preserves lighter color with bright, clean flavors, ideal for delicate salads, seafood, and fresh fruits.

5 Years Barrel-Aged White Traditional - At least 5 years in ash wood barrels. Delicate and luminous with refined mineral notes and crisp brightness.
6 Years Barrel-Aged Dark Traditional - Minimum 6 years in durmast oak barrels. Classic richness with rounded complexity, notes of vanilla and gentle spice.
