This is where time becomes an ingredient. Each bottle represents years of patient aging in wooden barrels, where grape must slowly transforms into liquid gold.
The Traditional Process
True traditional balsamic begins with Trebbiano and Lambrusco grapes from Modena, cooked into concentrated "mosto cotto" and after the slow cooking, the grape must is placed into barrels to mature for years. Aged in a "batteria" of wooden barrels using the solera method, master vinegar makers transfer the aging vinegar through different woods, each adding unique character.
