Chile Dark Balsamic Vinegar from Modena
The first thing you notice is how this glaze moves, thick and dark with tiny flecks of chile powder suspended throughout. Give it a gentle shake and watch those spices dance, reminding you this isn't your ordinary balsamic.

The Taste
Taste it straight, and you'll understand why I'm so excited about this one. It starts with that familiar balsamic sweetness, the concentrated grape sugars coating your palate, but then comes the warmth. Not a harsh burn, but a gentle, building heat that spreads slowly across your tongue. The chile adds complexity without overwhelming the delicate balance of sweet and tangy that makes great balsamic so special.

At 4.48% acidity, it's remarkably smooth for something with this much character. The reduction process has concentrated all those beautiful flavors while keeping that gentle touch that makes it approachable for everyone.

Where This Glaze Shines
This is where things get really exciting. Drizzle it over grilled vegetables and watch how the chile heat plays against the charred sweetness. It's absolutely magical on roasted Brussels sprouts or cauliflower, where the bitterness of the vegetables balances perfectly with the sweet heat.

On proteins, it's a game changer. Brush it over chicken in the last few minutes of grilling, or use it as a finishing touch on pork tenderloin. The sweetness caramelizes while the chile adds that perfect kick that makes people ask for the recipe.

Even simple things become special. Try it drizzled over fresh mozzarella with a pinch of sea salt, or toss it with roasted sweet potatoes. The combination of sweet, heat, and that deep balsamic complexity creates layers of flavor that keep you coming back for more.

From Our Modena Producer
This bottle captures authentic Italian reduction technique made with wine vinegar and grape must from crushed Trebbiano and Lambrusco grapes, enhanced with natural chile. The grape must is slowly heated until the water evaporates and the natural grape sugars concentrate, creating that perfect syrupy consistency.

Here's what makes this special: none of our balsamic vinegars contain any added sugar. The sweetness you taste comes entirely from the grapes themselves, while the chile adds its own natural heat and complexity. The result is a glaze that's both sophisticated and exciting.

Perfect Pairings That Elevate Everything
This chile balsamic becomes something extraordinary when you pair it with the right oil. These combinations have become my secret weapons in the kitchen:

For Rich, Smoky Depth:
Pair with any unflavored olive oil for classic balance. The oil's richness tempers the chile heat while letting the balsamic's complexity shine through. Perfect for marinades and finishing sauces.

For Mediterranean Magic:
Habanero Garlic creates an incredible double heat experience. The balsamic's sweet heat plays against the oil's warm spices, creating something that's bold without being overwhelming. Unbelievable on grilled lamb or roasted eggplant.

For Bright Contrast:
Meyer Lemon Olive Oil provides the perfect cooling counterpoint to the chile's warmth. The citrus brightness cuts through the richness while highlighting the grape sweetness. Try this combination on grilled fish or summer salads with stone fruits.

Important Note
Our balsamic vinegar is reduction balsamic vinegar, also known as balsamic glaze, from Modena, Italy, and is made with wine vinegar and grape must (crushed Trebbiano and Lambrusco grapes). None of our balsamic vinegars contain any added sugar; the sugar in our balsamic comes from grapes. Balsamic vinegar does not require refrigeration. Refrigeration can cause condensation to form inside the bottle, which can dilute the flavor. The best way to store balsamic vinegar is in a dark, dry place, such as a dark cupboard or pantry, at room temperature. It is best to keep bottles away from heat sources and avoid extreme temperature fluctuations. To learn more visit our FAQ page.
